A soft-clad duchess, painted in afternoon light, is often credited with shaping the very ritual of tea we cherish today: Anna, the 7th Duchess of Bedford. In the early 1840s she found herself faint with mid-afternoon hunger between lunch and a late dinner, and she began requesting a tray of tea, bread, butter, and cake brought to her room. What began as a private comfort soon became a social custom—she invited friends, and the interval between midafternoon and evening became a civilized pause for conversation, refreshment, and repose.

That pause grew into the gracious structure of afternoon tea: delicate sandwiches, scones with clotted cream and jam, and an array of small pastries, all served with a pot of properly steeped tea. High tea—often mistaken as grander than afternoon tea—has its own working-class roots; served later in the day, it combined heartier fare with tea and was meant to satisfy after a long day.
